This is a delicious recipe for a classic marble cake, combining vanilla and chocolate flavors with a soft glaze. Perfect for any occasion!

Marble Cake

For one large marble cake, you’ll need:

  • 150g of room temperature butter
  • 380g of granulated sugar
  • 2 eggs
  • 1 vanilla bean
  • 4g of fine sea salt
  • 220g of heavy cream
  • 260g of flour
  • 6g of baking powder
  • 20g of unsweetened cocoa powder
  • 120g of water
  • 150g of dark chocolate (60%)
  • 30g of neutral oil
  • 50g of almonds

Start by mixing half the room temperature butter, half of the sugar, the vanilla seads and salt in a food processor. Incorporate one egg while the processor is running, then add 140g of flour with half of the baking powder, and finally half of the cream. Transfer your batter to a piping bag, and repeat the process for the cocoa batter, replacing 20g of flour by the cocoa powder.

Line a cake mold with parchment paper. Pipe a line of vanilla batter in the center of the mold, followed by a line of chocolate batter directly on top. Repeat this process, alternating colors. Tap the mold firmly on the table several times to evenly distribute the batter, and bake for approximately 60 minutes at 150°C (it may take up to 1h30 depending on the oven and mold).

Once fully baked, let your cake cool for 5 minutes and soak with the syrup obtained after cooking the water with the rest of the sugar for a few minutes. Then, refrigerate for 12 hours before applying the glaze.

Finally, melt your dark chocolate over a bain-marie, add the oil and the chopped almonds, let the glaze cool slightly, then pour over the cold cake. Let it sit for a few minutes, and enjoy!
